The Költen Proverb “Du bes noch nit lans Schmitz-Backes” (you are not yet past the Schmitz-Backes) is justified for the Cologne in Severinstraße 5. There is the Backhaus Schmitz ("Backes")
The saying goes that someone is not yet out of danger.
The story is told very varied. The version preferred by the Cologneers is as follows: A historical punishment practice stipulated that the convicted person (if he did not face the death penalty) had to wear a wooden coat from the Archbishop's court (the Hacht), which lay on the cathedral plate until the end of Severinsstraße. All the people of Cologne who still had something to do with the prisoner beat the prisoner until he reached the Severinstor. Once there, he had finally achieved freedom. It is said that not everyone reached the Severinstor alive. So they are “nit along Schmitz Backes jekumme”.

However, this caning (the “steupen”) is not historically clearly proven. Also, the Backhaus Schmitz can clearly only be proven in 1797.

The story on Kölsch told by Katharina Petzold Do bes still nit lans Schmitz-Backes
Do bes still nit lans "Schmitz-Backes" ess e worwoot, wat huck en Kölle jebruch weed. Everybody knows what you mean?
Wä Schmitz hot jehö’t at the Kölsche Huhadel, whose vun Schmitz. Em Kölsche Tilefonboch ha’mer five Sigge full of Schmitzens un domet mer all the Schmitze undifferentiated, krijjen who still a nickname, that at se pass.
If you had a smith and long Nas, eat that Schmitze-Nas. If it were a Puckel, it was the Schmitze-Puckel. If Schmitz had no horn, eat the Schmitze-Plaat. Eat a Schmitz torment, eat that Schmitze-Lang. Don't worry, the Schmitze-Schmal.
Su ha’mer noch dr Schmitze-Jrön, de Schmitze-Möhn, der Schmitze Jäl,
And now it bessje Jeschichtskund. Do wor öm et Johr 1797 e Backes (bakery) op der Vringsstroß No. 5, koot vör der Vringspooz. The one you hear from Backes, Schmitz. Sorry, that's when Schmitz-Backes eat jewooden.
Jetz still knows what it would be with "Do bes still nit lans Schmitz-Backes". Schmitz-Backes wouldn't have bruted us Brütcher jebacke, that Backes did och en jrosse Roll sille, when for an example a poor Hösch had usjefresse, Strof vum Tipo em Frankentoon bes aan de Vringspooz öm si Levve run mot, and everyone can spew in rotten oils, trieze. Doför hät mer och “Staupenschlag” jesaat. Hatt’e the gate üvverlääv, kom alsu aan der Vringspooz aan, then wor däaan Schnitz-Backes vörbei and frei.
That's the sweetest guy.
Huck, no one has to run my öm si Levve, ävver keinder alles ens e jros odder klei Problem. If it does, then it's Schmitz-Backes. If one of them had an op on the Schlipps jetrodde (offended and would have then still with the e Hoehnche ze plöcke (to hold them accountable)) saw me och: "Met däm ben I still nit flaring! That eats still nit lans Schmitz-Backes! Dakritt still sing Knuuze! Do can leave the drop"
